Storage

Storing Garlic  Garlic keeps well in a moderately cool environment at approximately at about 17 degrees Celsius (55 degrees Fahrenheit) and a relative humitidty of about 50%.  Good ventilation is essential and mesh bags are ideal.  You must be careful to not let your stored garlic cool down to a lower temerature and back up again, as this triggers the growth stage and your stored bulbs will soon be producing green shoots.  We found our hardneck garlic to still be firm after six months storage, so if stored properly, it can last through a large part of the winter.
